Warm, sunny days and cool, clear nights defined the long 2025 growing season across all our Sauvignon Blanc sites. With no significant weather extremes, we were able to preserve bright, natural acidity and dial in our ideal Sauvignon Blanc profile-carefully threading the needle between overt herbaceousness and excessive tropical character.
Winemaker Notes
Following harvest in the cold early morning hours, the whole clusters were rushed to the winery for immediate gentle pressing. The fresh juice was fermented cold in jacketed stainless-steel tanks, allowing us to maintain the vibrancy and bright natural acidity of this classic Sauvignon Blanc.
Tasting Notes
Our 2025 Sauvignon Blanc offers a vivid spectrum of flavors, from Asian pear to Meyer lemon and pomelo. On the palate, tantalizing hints of jasmine and white peach take center stage. Crisp, natural acidity amplifies the fresh fruit character while maintaining a sublime minerality and a refreshing tension that carries through the finish.
